Tomato & Cucumber Mediterranean Salad
A quick, refreshing, and delicious salad with fresh parsley and a light lemony dressing!
This salad goes well with spiced meats, crispy chickpeas, yogurt – or basically anything that needs some crunch! It kind of like a “Mediterranean Salsa”.
Tomato & Cucumber Mediterranean Salad
Servings: 4 servings
Ingredients
- 6 medium tomatoes (about 3 cups) diced (if using smaller cherry tomatoes, can cut them in half
- 1 large cucumber diced (optional to leave the skin on)
- 1/2 red onion finely diced
- 1/2 cup parsley chopped
- 1/4 cup olive oil
- 3 tablespoons lemon juice
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon ground sumac (optional, can be found in Middle Eastern grocery stores)
Instructions
- Place the tomatoes, cucumbers, parsley, olive oil, lemon juice, salt, pepper, and sumac in a bowl and mix. Let it sit for about 5-10 minutes and taste, adjust seasonings as needed.
