Nutrition: Carrots are high in the antioxidant beta-carotene, and when you cook it beta-carotene, it’s bioavailability (how much your body absorbs) is increased! Carrots are also a good source of Vitamin A and fiber – keep the skin on carrots (don’t peel em!) to keep more fiber!
Culinary Basics: Raw carrots are great grated or shaved for a slaw and when carrots are cooked, more of their natural sweetness is brought out. Carrots are also great when pickled! You can use the carrot top greens for pesto or a quick saute!
