Mmmm mole: a Mexican sauce that is deep and rich in flavor. We’ll be making a version, inspired by the amazing cookbook Decolonize Your Diet, that used pumpkin, allspice, chocolate and peanuts for flavor and can be made in just over an hour! We’ll also discuss the history behind mole and the many ways it can be made.
We’ll stuff tortillas with cheese, chicken or beans and smother it in the rich mole sauce. Enmoladas are similar to enchiladas, but the difference is you use a mole sauce rather than a chile sauce. To keep it super seasonal, you can use any type of local winter squash for the pumpkin.
