What the experience includes:

Our cooking classes are a one-of-a-kind experience. For this special class, we’ll join our guest chef, Julian Scanlon, to explore the world of fermentation, from its ancient origins to its health benefits. We’ll focus on sauerkraut fermentation, mastering the step-by-step process using different fermentation tools and discover the safety measures against harmful bacteria. By the end of the class, you’ll be equipped with the knowledge and confidence to embark on your lacto fermentation journey. Unleash the secrets of this preservation technique and savor the unique flavors and wellness advantages of fermented foods. Join us and discover the transformative power of fermentation!

 

What’s on the menu:

  • Julian will guide you through making sauerkraut and other lacto-fermented seasonal vegetables. You’ll take home 2 jars of fermented vegetables.
  • Then we’ll prepare a seasonal gut-boosting bowl consisting of rice, beans, seasonal veggie saute, a creamy herb sauces, and previously made sauerkraut and other fermented vegetables.

 

More about guest chef, Julian Scanlon:

Julian Scanlon is a passionate advocate for local food systems, highlighting human health and the health of the planet. Growing up in Italy from the ages of five to eighteen, he developed a deep appreciation for the unique flavors and nutritional value of food grown close to home. After returning to Albuquerque, New Mexico, where he was born, Julian turned to fermenting his own foods as a way to maintain a healthy diet after struggling with the lack of nutritionally dense foods and the overabundance of processed foods. Through experimentation and research, Julian discovered the numerous health benefits of fermentation and its positive effects on gut health. He is a skilled fermenter, creating delicious and healthy foods such as kombucha, sauerkraut, kimchi, vinegars, and more. Whether foraging for mushrooms or tending to his garden, Julian is dedicated to honoring nature’s gifts by helping to steward our ecosystems and human systems back to a place of health and homeostasis.

We are so excited to be partnering with the first Native women-owned brewery! Their beer menu includes unique sour beers and uses indigenous ingredients, like foraged wild sumac, prickly pears, Navajo tea leaves, and juniper berries. Who is this class for?

This class is for someone who wants a unique cooking experience. You’ll learn about local farms, sustainability, nutrition, and cooking techniques. Our recipes focus on teaching you how to utilize and cook with seasonal produce, but it doesn’t matter if you are a vegetarian, vegan, or carnivore – we all need to eat more plants!

Whether you’re a beginner or more seasoned cook, everyone can learn from our classes. We always have extra staff who can help with additional instruction if needed.

 

Our cancellation policy:

Cancellation: Should you need to cancel a reservation for this class, you will receive credit towards another class for any cancellation made four (4) days or more before the class date. Due to class prep-time and food purchases, cancellations made within three (3) business days of your class will not qualify for a refund or credit. The only exception is if you are sick (please stay home!), we can use our discretion. You must email us if you’d like to cancel and receive credit. Tickets are transferable, you can have someone come in your place, just please let us know.

Inclement weather: The Sprouting Kitchen reserves the right to cancel a class due to inclement weather or emergencies. If we need to cancel, we will notify you by email (and phone if possible) to offer you a credit towards another class or a full refund.

 

A note on our costs:

Kids (under 12) are FREE  (up to 2 kids) let us know when checking out how many kids (and ages) you are bringing.

The price of your ticket includes:

  • We pay our farm partners for their time, knowledge, and land stewardship.
  • The equipment and time associated with setting up a pop-up kitchen on a farm
  • The cost of purchasing the freshest, regeneratively grown ingredients from local farmers
  • Recipe development to make sure our recipes highlight local ingredients AND taste incredible
