Varieties:
Seedless Watermelon: sweet, juicy and seedless
Picnic Watermelon: usually larger; traditionally what you find in the grocery store; have a green rind and red/dark pink flesh
Icebox Watermelon: sweet and smaller than other varieties; typically have a darker green rind with red flesh
Yellow/Orange Watermelons: can be both seeded and seedless; usually have a green rind and either orange or yellow flesh
Nutrition: Watermelon is large, sweet and very hydrating (91% water, to be exact, as indicated by its name). Watermelon is also a great source of vitamin C, which plays an important role in boosting your immune system, collagen synthesis and iron absorption.
Culinary Basics: Watermelon pairs very well with many flavors including mint, vinegar, salt, avocado, citrus, feta cheese, coconut, jalapeño, cucumber, honey and salmon. Being sweet and juicy, watermelon can be eaten fresh, grilled, frozen and even used to make drinks.
