Spiced Carrot Salad
This salad has sweetness from the carrots with balanced with a mixture of warmed spiced. This flavor combination is popular in Morocco – and trust us with the cinnamon here!
Spiced Carrot Salad
Ingredients
- 2 tablespoons lemon juice
- ¼ cup raisins can substitute chopped grapes
- 4-5 cups carrots grated on a box grater or food processor (or about 1 lb or one bunch of carrots)
- ½ cup parsley or cilantro chopped
- ¼ cup olive oil
- ¼ cup almonds chopped
Spice Blend
- 1 teaspoon cinnamon
- 1 teaspoon cumin
- 1 teaspoon paprika regular or smoked
- 1 teaspoon salt
- ⅛-¼ teaspoon cayenne more or less depending on spice preference
Instructions
- In a small bowl, add raisins and lemon juice, and mix. Allow raisins to sit and plump up for about 5-10 minutes.
- In a large bowl, add all other ingredients. Mix well.
Notes:
- Once you have added all spices and mixed well, taste the dish. If you think it could use more spices, go for it!
- You can make this dish in advance, and keep it in the fridge. The flavors actually get better the longer they sit together!
